This little gem comes from my friend Pam. She likes to bring this dip to our food pantry potluck lunches when the theme is Mexican food. I like for her to bring it, but I also like to eat it. All. I could be a happy girl with a bowl of dip and a bag of tortilla chips!!
Fiesta Corn Dip
1 can diced tomatoes with green chiles/Rotel
1 can fiesta corn (reg corn will work)
1 8oz carton sour cream
1 c real mayonnaise
1 c finely shredded Colby/Jack cheese…
Drain tomatoes and fiesta corn thoroughly, mix together with sour cream and mayo. Stir in Cheese. Chill in refrigerator for a least 1 hour. (to make extra spicy, add some chopped jalapenos)
